The year, month by month

January

  • Start the spring tomato and pepper transplants indoors; peppers want the heat mat, and the goal is plants loaded with fruit before the June heat shuts fruit set down.
  • Set out onion plants or sets this month and next, short-day types for Bell County.
  • The winter garden still plants: sow lettuce, spinach, greens, radish and peas right in the bed; the ground never freezes here.

February

  • February starts the spring garden: sow beets, carrots, chard, greens, lettuce, mustard, radish, spinach and turnips, and put seed potatoes in Feb 1 to 15.
  • Keep the tomato and pepper bench growing under lights for late March set-out, and set up the fall-crop plan.
  • Late February into early March: plant horseradish side-root pieces in a penned corner.

March

  • Mid March is the average last frost (~Mar 15); keep row covers ready for the late cold night, and let the mesquites leaf out before you trust the weather.
  • Latter half of March: transplant tomatoes, peppers, eggplant and tomatillo into soil that has hit 55F, 65F for peppers.
  • Late March into April: direct sow beans, corn, cucumbers and squash as the soil warms; southern peas wait for mid-April; run beans and greens in two-week successions.
  • Top-dress the beds with compost and mulch 3 inches deep before the heat; mulch keeps soil 10 to 20 degrees cooler.

April

  • April is the last full warm-season sowing month: beans, corn, cucumbers, melons, okra, southern peas, squash and watermelon all go in now.
  • Mid April into May: plant sweet potato slips once the soil is thoroughly warm.
  • Cut the last winter greens and spring radish before the heat bolts them; keep the salad successions coming.
  • Sow Malabar or New Zealand spinach for the summer greens slot.
  • Stake and cage the tomatoes and peppers while they are small, and lay drip lines; August is not the month to improvise.
  • Mid April, once frost danger passes: plant chayote, the whole fruit at the trellis, 8 to 10 feet apart.
  • Plant the summer herbs: basil transplants go in, sow epazote with the beans, set out lemongrass and Mexican oregano once frost danger passes.
  • After frost: sow or transplant marigolds, start staggered sunflower sowings (into May), and plant nopales pads on well-drained ground.

May

  • First half of May is the final call for warm-season sowing; after that the heat owns the bed.
  • Start the fall bench indoors: tomato, pepper and eggplant transplants for the July-planted fall crop.
  • Renew mulch where spring rain has thinned it; bare soil is what hits 100F in July.
  • Shift the watering: deep, early-morning soaks, about an inch a week, and skip any week that brings half an inch of rain.

June

  • Mid June the fruit-set gap opens: nights near 75F and days above 90F, so tomatoes, peppers, beans and squash hold flowers instead of setting fruit.
  • Harvest what the spring crop set: tomatoes, peppers, tomatillo, squash and beans.
  • Hang 30 to 50 percent shade cloth over peppers and grow bags, and move containers where afternoons shade them.
  • Water early in the morning, deep and infrequent; feel the soil 3 inches down before you pour.
  • Lift garlic as the lower leaves brown, and cure it somewhere dry, airy and shaded.
  • No feeding in the high heat; fertilizer salts draw water out of the plant. The fall transplants started in May just need shade and steady water.

July

  • July 1 to 25: transplant the fall tomatoes and peppers; water daily for about two weeks while their roots take, then taper.
  • Late July into August: direct sow the fast fall round, 60-day varieties only: cucumbers, corn and summer squash, and plant the fall seed potatoes; bush beans wait for late August into early September.
  • Late July: start fall brassica transplants, broccoli, cabbage, cauliflower, kale, kohlrabi and collards, for a September planting.
  • No feeding this month or next; the salts pull water out of plants in the high heat.
  • Drip on a timer or an olla keeps the bed alive, and morning watering is non-negotiable.
  • Mid July: the optional pumpkin sowing if the porch wants a jack-o-lantern; the April crop's first fruit ripen from late summer.

August

  • Watering is the name of the game: 1 to 2 inches a week in the high heat, and August is also the driest month of the year.
  • Mid August: the last okra sowing, at least 3 months before the November 15 first frost. Southern peas and bush beans follow through early September, 10 to 12 weeks out.
  • Late August, where the heat breaks: the first fall transplants can go out; greens and brassicas mostly hold for September.
  • Greens return late in the month: the first fall-winter sowings of the crops that bolted in June.

September

  • Sep 1 to 20: transplant the July-started brassicas; nights cool enough that peppers and fall tomatoes resume setting fruit.
  • Sow the September round: lettuce, spinach, greens, radish and turnips; cilantro goes in now for the fall salsa season.
  • Mid September rains usually return; taper watering back to deep and infrequent.
  • Mid September into late October: plant strawberries, an honest-hard fall crop here; late September, sow peas.
  • With the cool-season round: sow nasturtium and calendula for spring bloom.

October

  • The fall garden really takes off this month: plant pretty much any cool-season vegetable.
  • Early to mid October: plant garlic cloves, about 4 to 6 weeks before the first frost, and mulch the bed.
  • Columbus Day: sow onion seed, short-day varieties for Bell County.
  • First frost approaches (~Nov 15); enjoy the fall harvest peak: peppers, fall tomatoes and the first greens.
  • Plant the permanent herbs this month and next: rosemary, thyme, oregano, chives and sage, October to November; set new mint pots now or in February.

November

  • First frost ~Nov 15: pick the last tomatoes and peppers ahead of it.
  • The winter greens season opens: sow greens, lettuce, radish and spinach; the ground does not freeze solid, so winter is a growing season too.
  • Mulch the garlic and onion beds; roots left in the ground, carrots and turnips, sweeten after a frost or two.
  • After the first frost: dig horseradish, mid-November on through winter.

December

  • Keep sowing and cutting the winter round: greens, lettuce, radish and spinach, and water the bed in dry spells.
  • Soil-test through the Extension office, review the season's notes, and order seed for the January tomato and pepper bench.
